Bubba's Corn Muffins

Introduction

A very moist and delicious corn muffin! My husband hates cornbread, but loves these. It's a modified Paula Deen recipe. A very moist and delicious corn muffin! My husband hates cornbread, but loves these. It's a modified Paula Deen recipe.
Number of Servings: 15

Ingredients

    3/4 cup self-raising flour
    1 cup cornmeal
    1 can creamed style corn
    1 cup of plain nonfat yogurt
    1/2 cup vegetable oil
    1.5 Tbsp baking powder
    1/4 tsp cayenne pepper
    1/2 tsp salt
    2 eggs

Directions

Mix dry ingredients until combined. Mix wet ingredients until combined. Then spray muffin tin with baking spray and fill each cup 2/3 full. Bake in a preheated oven at 375F or 180C for approximately 18-20 minutes until lightly browned on top. Even better at room temperature!
