1 cup sifted, all-purpose flour
2 tbsp icing suger (confectioners sugar)
3 tbsp unsalted butter, well chilled and cut into pieces
2.5 tbsp shortening, well chilled and cut into pieces
About 3 tbsp ice water
Apple Pie Filling:
3/4 cup granulated sugar
1/3 cup all-purpose flour
1 tsp ground cinnamon
1 tsp ground nutmeg
dash of salt
8 cups thinly sliced, peeled apples
3 tbsp butter
Combine the flour and icing sugar in a bowl. Cut in the butter and shortening with a pastry blender until the mixture resembles oatmeal flakes. Gradually add the water, mixing just until the dough holds together.
Transfer the dough to a lightly floured surface. Using the heel of your hand, smear 1/4 cup of dough at a time across the surface to form a 6 inch long strip. Gather the dough together and repeat two more times. Gather the dough together, flatten it to form a disk. Wrap the dough with plastic wrap and refrigerate it at least 1 hour.
Preheat oven to 425 degrees.
Mix sugar, flour, nutmeg, cinnamon and salt. Stir in apples.
Line greased pie plate with pie dough. Dump apple mixture in. Dot with butter. Cover the pie edge with a thin piece of foil so it doesn't darken too soon. Bake until crust is a nice brown and the apple juices are bubbling. Approx 40 to 50 minutes.
