Introduction

I'm allergic to mint so this is my alternative to Tabouli. This is a great fun colorful salad to serve with your summer BBQ. Low in calories and easy to make. I'm allergic to mint so this is my alternative to Tabouli. This is a great fun colorful salad to serve with your summer BBQ. Low in calories and easy to make.
Number of Servings: 4

Ingredients

    1 cup cooked and cooled coucous
    1 medium red pepper chopped
    1 medium english cucumber chopped
    2 cups chopped parsley
    1 medium tomato chopped
    2 tbs olive oil
    salt and pepper to taste

Directions

Cook coucous as instructed on package, refrigerate until cool
Add all other ingredients and mix well
Salt and pepper to taste
Enjoy!!!
