Little Bran Muffins (vegan)

Introduction

Little vegan bran muffins using a regular muffin pan - under 60 cals each.

These are not sweet and are really good for you. If you would like a sweeter muffin, consider adding dates instead of raisins or adding your favorite sweetener (these will change the nutrition information).

Number of Servings: 12

Ingredients

    1 Medium Apple (pureed)
    c. Unsweetened Nut Milk
    1 c. Wheat Bran
    c. Whole Wheat Flour
    1 tsp. Baking Soda
    tsp. Cinnamon
    c. Raisins

Directions

Preheat over to 400F (380F on a convection oven)

Puree apple in food processor (you could also use unsweetened apple sauce).

In food processor bowl with dough attachment, add remaining ingredients except the raisins. Process until well mixed, remember to scrape down the sides of the bowl.

Add raisins and mix by hand.

Spray or line muffin pan. Scoop muffin mix in pan. Each cup should be about half-way full.

Bake for 10-15 minutes until desired doneness is reached.
