Introduction

This salad is a meal for one that can easily be scaled for more people. If you like more protein in your meals, add cooked beef, chicken or tofu (which are not included in the nutritional info). Ingredients

    1/2 cup corn, fresh, canned, or frozen
    1 cup fresh green beans, snapped into bite-sized peices
    1/2 large, ripe tomato, diced
    1 tbsp cider vinegar
    1 tsp olive oil
    1 tsp fat-free mayonnaise
    1 tsp water
    dash of salt and pepper
    1/4 shallot, minced
    1 green onion, chopped
    1 tbsp fresh basil, chopped

Directions

Makes a dinner salad for one person.

Bring a pot of water to boil. Boil green beans 5 minutes. Add corn and continue to cook one minute. Drain and rinse under cold water to cool.

Combine remaining ingredients in a bowl. Add corn and beans. Let stand at room temperature 30 minutes to blend flavours.

Grilled, thinly sliced flank steak is a nice addition to this salad.
