Ingredients

    1 c. butter or margarine
    2 c. sugar
    3 c. flour
    4 eggs
    1 c. non-fat milk
    1 tsp. almond extract (or vanilla extract)
    1/2 tsp. salt
    3 tsp. baking powder

Directions

Cream butter and sugar well, then add one egg at a time to creamed mixture. Alternately add sifted flour and milk, and finally add almond extract, salt and baking powder. Bake in moderate oven (350 degrees F.) for about one hour. Test with toothpick for doneness after 50 minutes, as oven temperatures vary. Cake is done when a toothpick inserted into the center of the cake comes out clean. This recipe makes 3 nice-sized layers or one tube pan cake. You may vary the recipe by adding a little spice to one layer and stacking it in the middle, or add a little cocoa (mixed with a little water) for a chocolate layer, etc. Extract can also be varied, e.g. use1/2 tsp. vanilla and 1/2 tsp. lemon extract instead of 1 tsp. almond extract.
