Spanish chicken

Number of Servings: 3

Ingredients

    400g chicken thigh (1 large), diced in 2cm pieces
    1 tsp olive oil
    1 small onion, sliced
    1 cup chicken stock
    1 cup tomato/veg pasta sauce
    10 black olives, halved

Directions

Brown chicken in oil. Remove from pan, and cook onion till soft. Return chicken to pan, add remaining ingredients. Bring to boil and simmer until chicken is cooked, around 15 minutes.

Serve with pasta or rice, and garnish with fresh basil or italian parsley.
