Ramen Eggs

Introduction

Modified from my mom's Million Recipes CD. Makes a great brunch, or dinner if you serve a side of some kind of veggies. Modified from my mom's Million Recipes CD. Makes a great brunch, or dinner if you serve a side of some kind of veggies.
Number of Servings: 4

Ingredients



    6 extra large eggs
    1 package of Ramen noodles, with seasoning packet (I usually use chicken, but I think any would be fine)
    2 Tbsp water
    1/2 tsp garlic powder
    1 tsp dried oregano

Directions

Beat the eggs and water together in a large bowl. Add the seasoning packet and mix thoroughly. Crumble up the noodles and let it soak in the egg mixture for about five minutes. Spray a nonstick pan and bring it up to about medium heat. Add the eggs and be patient. Wait for eggs to mostly set. You may have to break a couple of bubbles as they cook. When it's almost set, cut in quarters and flip to cook the tops, then serve.

Makes four servings, but is low enough calorie that if this is all you're having, or this and some veggies, you can have two.
