Spelt salad

Introduction

Great filling salad for BBQs or gatherings.

Number of Servings: 12

Ingredients

    4 cups hot cooked Spelt ( also called German wheat)
    3 cups green beans (cooked or from a jar)
    3 cups yellow beans (cooked or from a jar)
    3 or 4 red sweet peppers sliced thinly
    4 red onions sliced thinly in half rings
    1 cup crumbled feta
    0.5 cup white vinegar
    0.3 cup balsamic vinegar
    salt
    black pepper
    plenty oregano

Directions

Cook the spelt.
If your beans are fresh cook them, but not to tender
Cut the pepper in thin stripes
Cut the red onion in thin half rings
Crumble up your feta.

Mix everything in a bowl, pouring vinegar over it.
Taste to decide how much spices you would like.

Some say best when lukewarm, others prepare it on the second day... usually there is no third day for this salad.

Makes 12 packed 1 cup servings !
