Chicken Fried Rice

Introduction

Number of Servings: 4

Ingredients

    Brown Rice - 2 cups (dry) (four cups cooked)
    Chicken Breast - 2 breasts - bite size pieces
    Scallions - 0.25 cup
    Carrots - raw - 0.5 cup chopped
    Garlic - 1 clove minced
    Soy Sauce - 2 tbsp
    Olive Oil - 1 tbsp
    Egg - one large

Directions

Cook rice according to directions (this is a double batch)
Heat olive oil in saute pan - medium high
Cook chicken thoroughly (stirring occasionally helps)
Add carrots, scallions, galic and jalapeno and cook until carrots are soft (about 7 minutes)
Add rice and soy sauce
Stir until mixed and rice is heated through
Add egg and cook thoroughly about 1-2 minutes

Makes 4-6 one cup servings.
