Healthy Chili

Introduction

We love chili in our house. We also love using crimini mushrooms (baby portabellas) as a meat substitute. I started using them in our chili. The result was wonderful. We love chili in our house. We also love using crimini mushrooms (baby portabellas) as a meat substitute. I started using them in our chili. The result was wonderful.
Number of Servings: 7

Ingredients

    1 lb. extra lean ground beef (96% fat free)
    16 oz. crimini mushrooms, chopped
    1 small onion, chopped
    1 pkg. Williams Chili Seasoning (for 2 lb. of meat)
    1 can (14.5 oz) Petite diced tomatoes
    1 can black beans, drained
    1 cup tomato juice
    2 beef boullion cubes
    salt to taste

Directions

Brown ground beef. Add mushrooms and onions; cook slightly. Add chili seasoning packet, and tomato juice, boullion cubes and diced tomatoes. You can also add a little water if you like soupy chili. Add salt to taste. Allow to simmer for about 15 - 20 minutes.

Makes 7 one cup servings.
