2 Tablespoons Extra virgin olive oil 1 Clove garlic, crushed 1 Tablespoon Parsley, dried Crushed Red Pepper flakes (optional) 12 oz. Fresh Scallops
Over medium heat, add olive oil, garlic, parsley and pepper (optional). Sautee lightly for about 1 minute, stir occasionally. Add scallops. Cook scallops until medium brown, about 3 to 4 minutes each side. Remove scallops from oil and serve over prepared brown rice. Reserve oil to drissle over steamed vegetable or as a bread dip.
This was a great recipe! It was so fast and easy that dinner was done in no time! Even my super picky husband loved it and didn't put BBQ sauce on top of it....that's his way of "trying" something he knows he isn't going to like. I will definitely make this again!
This was very good! I do not do a lot of cooking so for me it was quick and so tasty. I wanted more which is the downfall. I also tossed in some spinach near the end and then put over some brown rice and put the remaining juices over it. Definitely delicious
Not bad. A tad bit bland, so I added some salt. But scallops are a bit bland, aren't they? This was a quick and easy meal. I added some steamed asparagus and was a happy camper. Thank you for sharing!
I made this more for my husband, however I also cooked a cod fillet with it and I thought it was delicious. My husband liked the scallops also. I did add a little lemon juice at the end a sprinkled some bread crumbs on the top. I would definitly use this recipe again!
