Introduction

6 simple ingredients, 1 bowl, and 1 spoon is all you need to have a high-fiber, high-protein, delicious breakfast that will keep you full all morning! Muesli is perfect for those with little time in the morning to cook a full breakfast from scratch; it "cooks" in the fridge while you sleep!

This may not be a "traditional" muesli, but it tastes great!

Number of Servings: 2

Ingredients

    1/2 cup nonfat greek yogurt (I used plain)
    1 cup oats (NOT quick-cook)
    1/3 cup light soymilk (again, I used plain)
    16 pieces Trader Joe's Frozen Mango Chunks (approx 95g)
    1/4 cup flaked coconut
    3 packets Truvia (optional)

Directions

Combine all ingredients together in a bowl that has a lid. It will be extremely thick!

Cover with lid (or plastic wrap) and leave in your refrigerator for 6 hours (overnight is best).

Makes 2 equal servings.
