SHIRL'S FRIED RICE

Ingredients

    2- cups SUCCESS boil-in-bag Brown Rice, cooked.
    1/2-cup Egg Substitute.
    1/2-cup Carrots, chopped.
    1/2-cup Celery, chopped.
    1/2-cup Onion, chopped.
    1/2-cup Peas, frozen.
    1/2-cup Corn, frozen.
    2-Tbsp. Soy Sauce, low sodium.
    Water as needed.
    1-Tbsp. Canola Oil

Directions

Add canola oil to non-stick pan. Cook egg into an omelet. Remove from pan. Add carrots, celery and onion. Stir fry, adding water as needed, until vegetables are tender crisp. Add frozen vegetables and cook to desired texture. Cut omelet into strips and add with rice to vegetables. Add soy sauce and mix to combine.
Makes approximately 8 1/2-cup servings.
