Ingredients

    - 1/2 apple, diced
    - 1/8 cup sauerkraut
    - 3 T balsamic vinegar
    - 1 medium carrot, sliced
    - 3 T salsa
    - 1 medium carrot, sliced
    - 1/4 cup fat-free yogurt (plain)
    - 1/2 cup black beans, drained and rinsed
    - 2 T guacamole (avocado only)
    - 1 packet Equal
    - 4 cups spinach
    - 1 medium mushroom, diced

Directions

Dice the vegetables, drain and rinse the beans (if using canned), then mix everything together in a medium to large bowl and enjoy!
