Low Carb Rescue Pancakes

Introduction

If you are low carbing the pounds off,,, this is a recipe I modified that will let you enjoy a great breakfast alternative.

Good enough that you wont feel like you are on a diet and it will rescue you when you are tired of eggs every morning.
If you are low carbing the pounds off,,, this is a recipe I modified that will let you enjoy a great breakfast alternative.

Good enough that you wont feel like you are on a diet and it will rescue you when you are tired of eggs every morning.

Number of Servings: 2

Ingredients

    1/4 cup Soy Flour
    1 tsp baking powder
    2 eggs
    2 tbsp olive oil
    1/4 cup heavy whipping cream

    Optional
    1 tsp vanilla extract
    2 tsp splenda

Directions

Beat eggs in blender adding olive oil and heavy whipping cream and briefly blending together. Add vanilla extract if desired.

Add soy flour and baking powder and complete blending. Add Splenda if desired.

Pour 3-4 inch diameter pancakes on griddle or skillet at medium high heat lightly greased. Flip when bubbles form on top. Complete cooking till golden brown.

Makes 4-8 pancakes depending on size poured.

Top with a bit of butter and sugar free topping of your choice.
