Chunky Chicken Chili

Introduction

Super easy white chili, perfect for post-weight loss surgery folks, with 30g protein per serving! Super easy white chili, perfect for post-weight loss surgery folks, with 30g protein per serving!
Number of Servings: 5

Ingredients

    2 medium chicken breasts, cubed (no skin or bones)
    2 cans canellini beans (undrained)
    1 can green chilis
    1T chili powder
    1T olive oil

Directions

Sprinkle the chili powder on the chicken, then saute in olive oil until lightly browned.

In a pot, combine beans (liquid and all), chilis, and chicken. Simmer until chicken is super tender - about 45 minutes. If you want to thicken the broth a bit, use a potato masher to squish some of the beans, then stir.

You can serve with a sprinkling of cheese - I used Sargento's Chipotle Cheddar. Yum!
