Number of Servings: 4

Ingredients

    3 Tbsp. cornstarch
    3 Tbsp. sugar
    2 Tbsp. unsweetened cocoa powder
    2 cups skim milk
    1 tsp. pure vanilla extract

Directions

In a saucepan, thoroughly combine the cornstarch, sugar, and cocoa. Add the milk and stir until very smooth. Cook on medium heat, stirring constantly, until the pudding comes to a boil.
Then lower the heat and gently simmer, stirring continuously, for 3 or 4 minutes. Stir in the vanilla, pour the hot pudding into a decorative serving bowl or individual custard cups, and serve warm or chill for about 2 hours, until cold and set.

* You can always replace the skim milk with whole milk for a richer pudding.
* And if you want a more intense chocolate hit, replace the cocoa powder with 2 or 3 ounces of high-quality semisweet chocolate, such as Scharffen Berger. Melt the chocolate separately, then whisk it into the other ingredients. Cook, stirring, until the mixture simmers and thickens. Add vanilla and serve.

Hi. I love this recipe but I just thought I'd tell you that you wrote skim milk in the ingredients list but in the nutrition breakdown it looks like you actually put in 2%. That's why there's so much more fat than there should be. - 7/16/10

Yes you are right, thanks for letting me know, I could not find a lower fat content milk in the SP ingredients list, glad you liked the recipe :)

  • I liked this a lot. Easy, not very unhealthy, and satisfying! For me, there wasn't enough cocoa, but that's easily tweaked. :) Thanks for sharing! - 1/3/13

  • Just thought I'd let you know that your ingredients list calls for skim milk, but in the nutritional breakdown it's listed as 2% - the numbers might be off! I made a few modifications and this was delicious, thank you! - 6/29/12

  • I didn't have cornstarch so I used potato starch instead and it worked just fine, the texture was a little too thick though but it tasted delicious. I think I might use a little more cocoa next time though for a richer chocolate flavor. - 3/26/12

  • Very nice and very chocolatey , just the consistancy, maybe next time I'll add some geletine - 4/19/11
