Chop onion and saute in butter/spread, till softened add cubed potato and broth, boil gently tillpotato is cooked, add brocolli and continue boiling gently for about 5 minutes. Process all in blender add 1/4 the blue vein cheese. Reheat then serve with the remaining cheese crumbled on top.
