California Orange Salad

This a salad I invented and made several times a week when we lived in California. It's especially good with almonds smoked on the grill. If oranges are out of season or you live far from orange country, you can perk it up by letting the sections soak in a bit of orange juice for a while before assembling the salad. Ingredients

9 romaine lettuce leaves, washed, dried, and torn into bite-sized chunks
1 orange, sectioned
1/2 cucumber, peeled if you like, and sliced
1/4 red onion, sliced thin
1 T. extra-virgin olive oil
1 T. white balsamic vinegar
Freshly ground black pepper
1 T. roasted almonds
Directions
Assemble salad, tossing with oil, then vinegar. Sprinkle almonds on top. Serves 3.
