Ingredients

    1 tsp olive oil
    1 large yellow onion
    1 package frozen spinach
    1 tbsp chopped garlic
    1.5 tbsp curry paste (can be substituted with powder)
    1 tsp red pepper flakes
    1 can garbanzo beans/chickpeas
    1 large sweet potato
    1 carrot
    1 stalk of celery
    1 can diced tomatoes
    1 can lite coconut milk
    1 cup vegetable broth

Directions

Thaw spinach. Chop onions into small-ish pieces. Sautee onions, garlic, red pepper flakes and spinach in olive oil. Add curry paste, stir until incorporated. Add drained chickpeas. Stir until incorporated. Add sweet potato, carrot, and celery stalk (chopped into small cubes) and partially drained tomatoes. Stir. Add coconut milk and chicken broth. Simmer until sweet potatoes are soft, stirring regularly. Serve over white or brown basmati rice, if desired (nutrition info does not include rice).
