Zucchini soup

Ingredients

    2 cups zucchini
    4 cups chicken broth
    .25 cup onion, chopped
    1 celery stalk
    1 tsp minced garlic
    .25 cup parsley
    juice from 1/2 lemon
    1 tbsp olive oil

Directions

Makes 4 1-cup servings

Heat olive oil in large saucepan. Add onion, garlic and celery and cook until softened. Add zucchini and stir. Add chicken broth. Bring to a boil. Reduce heat to a simmer and cook until zucchini is fork tender. Add parsley and lemon juice. Puree in blender food processor or with an immersion blender. Salt and pepper to taste.
