Individual Meat Loaves



Introduction

I made the following substitutions:

reduced onion amount from 3 cups to 2 cups
left out kosher salt
reduced sodium chicken stock for regular
reduced sodium tomato paste for regular
96/4 extra lean ground beef for ground chuck (81/19)
2 large eggs and one egg white for 2 extra large eggs

Ingredients

    1 tablespoon olive oil
    2 cups chopped yellow onions (2 onions)
    1 teaspoon chopped fresh thyme leaves
    1 teaspoon freshly ground black pepper
    3 tablespoons Worcestershire sauce (Great Value)
    1/3 cup reduced sodium chicken stock (Swanson)
    1 tablespoon tomato paste (Great Value)
    2-1/2 pounds extra lean ground beef
    1/2 cup plain dry bread crumbs (Progresso)
    2 large eggs and 1 large egg white, beaten
    1/2 cup ketchup (Heinz)

Directions

Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly. In a large bowl, combine the ground beef, onion mixture, bread crumbs, and eggs and mix lightly with a fork. Don't mash or the meatloaf witll be dense. Divide the mixture into 18 cupcake baking cups (pan or silicone) . Spread about a half tablespoon of ketchup on the top of each portion. Bake for approximately 25 minutes, or until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

Makes 18 mini (cupcake sized) meatloaves.
