1 cup Fresh tomato (chopped)
1 cup Fresh green pepper (chopped)
1/2 cupFresh Baby Portabello Mushrooms (chopped)
1 cup Instant Brown Rice
Canned Red Kidney Beans (rinsed)
1/2 cup Water
2 tbs Fresh Basil
1/2 cup Shredded Colby Jack Cheese
Add all other ingrediants except cheese and cover until rice is tender.
Add cheese and cook until cheese melts.
