Number of Servings: 8

Ingredients

    1 medium baked potato
    1/4 cup soy milk
    10 sprays zero-calorie butter
    .5 T red pepper flakes
    1 T cilantro
    1 T basil
    salt and pepper to taste
    1 T grated parmesan
    1/4 cup egg beaters

Directions

Bake potato in microwave for 5 minutes or until soft. Mash in small bowl and add milk, butter, spices and parmesan. Form into eight small hash brown pieces and flatten. Soak in egg beaters and lay on greased cookie sheet. Bake at 350 for 10-15 minutes or until they look crispy. Serves 8
