This is a hearty soup that is best sreved with a slice of pita to scoup up the remains of the bowl. You may choose to substitute vegetable broth for a vegetarian alternative. Ingredients

    Extra Virgin Olive Oil, 2 tbsp
    Onions, raw, 1 cup, chopped
    Garlic, 2 cloves, chopped
    Coriander seed, 1 tsp, crushed
    Cumin seed, 1 tsp, crushed
    Mint leaves, .25 tbsp chopped
    Parsley, .25 tbsp, chopped
    Pepper, black, .25 tsp
    Tomato Paste, 0.625 cup
    Campbell's Low Sodium Beef Broth, 4 cup
    Water, 3 cup
    Bulger Wheat, 0.75 cup
    Lentils, orange .75 cup
    Balkan Plain Yogurt, 0.5 cup

Directions

heat oil and saute onion 5-7 minutes until clear. Add garlic, cumin, corriander, and pepper continue to cook 1 minute to release aroma and flavor. Add tomato paste and heat 1 more minute. Stir in broth. water, bulger, and lentils; cover and simmer for additional 30 minutes then add mint and parsley in remaining 5 minutes.
Serve with a spoonful of yogurt and sprig of parlsley on top and a side of pita. Makes 8- 1 cup servings.
