Slow Cooker Mild Chicken Curry

Ingredients

    1 kg Skinless chicken thigh fillet
    3 medium potatoes
    1 whole carrot
    2 medium onoins
    1 whole red pepper
    4ooml nestle carnation evaporated light coconut milk
    1 tablespoon curry powder
    Fresh corriander to serve

Directions

Makes 6 servings
Dice Chicken and slice onions and brown in fry pan. Place in slow cooker once browned. Add sliced carrot, chopped potato and red pepper into slow cooker. Mix together curry powder and coconut milk and pour mixture over other ingredients. Place lid on slow cooker and cook on high for 4 hours or low for 8 hours. Stir through corriander to serve.
