Vegan Chocolate Brownies

Introduction

This is not a diet food but a treat that can be enjoyed occasionally. Add 1 cup of coarsely chopped pecans or walnuts if you want to add essential fatty acids and are not watching fat contents. Ingredients

    300g (1 1/2 cups) granulated sugar
    185g (3/4 cup) unsweetened apple sauce
    2 Tbsp water
    2 tsp ground flaxseed
    120 ml (1/2 cup) water
    2 tsp vanilla extract
    165g (1 1/3 cup) unbleached all-purpose flour
    95g (3/4 cup) unsweetened cocoa powder
    3/4 tspbaking powder
    1/4 tsp salt
    175g (1 cup) dark chocolate chips

Directions

Preheat oven to 180 C (350 F, gas mark 4)
Grease a 20x20cm baking pan
Stir together sugar, apple sauce and 2 tbsp water in medium sized bowl
Combine ground flaxseed with 120ml water in a small bowl. Add this to the applesauce mixture
Add vanilla extra, stir to combine
Combine flour, cocoa, baking powder, salt (nuts if using them) and chocolate chips in another small bowl
Add to the medium sized bowl with applesauce mixture. Stir until combined
Transfer to baking pan and bake for 40 min
This is a moist brownie but you can cook longer if you want drier brownies
Let cool in tin for 5 min, then turn onto a cooling rack and let fully cool before cutting into 8 pieces.
