Grilled Mustard Pork

Ingredients

1 large egg white
2 tbsp plus 1 tsp whole grain dijon
1 pork tenderloin (1 1/4 lbs approx)
Directions
Coat grill with non-stick spray and heat to Medium-High.
Whisk egg white and mustard together. Season pork with salt and pepper, then spread half of the mustard glaze thickly on the pork. Place glaze side down on the grill, and spread remaining glaze on the pork. Cook, turning as needed, until 145 degrees; approximately 20 minutes.
Let rest 5-10 minutes, then slice.
Makes 4-5 servings.
