Veganomicon Vegan Mac & Cheese



Introduction

From Veganomicon p. 195

Basically, you make a double recipe of the Cheezy sauce from p. 214 & mix it with the macaroni & tofu. This doesn't taste anything like "real" macaroni and cheese, but it's a really great vegan sub because it's creamy & hearty like the real thing. If you don't have Veganomicon, you should definitely check it out.

    Double recipe Cheezy sauce (vegan, with nooch)
    1 lb elbow macaroni
    1 lb ex-firm tofu
    1 t. salt
    1 T. olive oil
    2 T. lemon juice

Directions

Makes 8 - 10 servings. Calorie count is for 8 servings.

Leftovers heat up well in microwave. Lasts for about a week in the fridge.
