Easy Chicken Enchiladas

Introduction

Ingredients

    Ingredients:
    Chicken Breast, no skin, 6 ounces
    *Old El Paso Enchilada Sauce, 1 cup
    *Sargento Mexican Blend Cheese, 0.5 cup
    Sour Cream, reduced fat, .2 tbsp
    La Tortilla Factory small low carb/low fat tortilla, 4 tortillas

Directions

1) Poach the chicken and shred.

2) Preheat oven to 375F. Lightly grease a glass baking dish. I use spray olive oil, which has zero calories.

3) Combine the chicken with the sour cream, a little of the enchilada sauce to and half of the cheese.

4) Spoon enchilada filling onto tortillas, roll up and place seam-side down in baking dish.

5) Pour remaining enchilada sauce over the tortillas along and sprinkle with the remaining cheese.

Bake 15-20 minutes

Serve with sliced avocado and shredded lettuce with a salsa as your dressing.

I also like to slice up some green onions as a garnish (this is NOT calculated into the calories).
