Blueberry Pancakes

Introduction

I have made this pancake recipe (from the Fannie Farmer cookbook) for 30 years. It is a favorite of my sons, and takes me literally 3 minutes to mix up. Tastes far better than any mix! Number of Servings: 4

Ingredients

    3/4 cup milk
    2 Tblsp. melted butter
    1 egg
    1 cup white flour
    2 tsp. baking powder
    2 Tblsp. sugar
    1/2 tsp salt
    1 pint fresh blueberries (OPTIONAL)

Directions

Melt butter in microwave in small bowl; add milk and egg and whisk together well. In separate bowl, mix all the dry ingredients and whisk together. Pour the wet ingredients into the dry, mix well and add blueberries. Makes 4 large pancakes or 8 small ones. Serves 4, which makes you realize how out of whack portion sizes are in breakfast restaurants!
