Lighter BLT Nibbles

Introduction

I made this yesterday to tide everyone over between lunch and dinner and it was a HUGE hit. Will definitely make over and over. I had planned ona photo, but they were gone! I count 2 per person but I know they had more yesterday! This is a lighter version of a Recipezaar appetizer by KeyWee. I made this yesterday to tide everyone over between lunch and dinner and it was a HUGE hit. Will definitely make over and over. I had planned ona photo, but they were gone! Number of Servings: 24

Ingredients

    48 whole cherry tomatoes
    3 Tbs real bacon bits or 3 slices of pre-cooked chopped bacon
    3/4 cup Hellman's Light mayonnaise
    3 scallions (chopped)
    3 tablespoons grated parmesan cheese
    2 tablespoons fresh parsley (snipped)

Directions

1. Cut a thin slice off the top of each tomato.
2. Scoop out and discard the pulp (I used a melon-baller).
3. Invert tomatoes on paper towels to drain. (Do this!)
4. In a small bowl, combine all remaining ingredients and mix well.
5. Spoon into tomatoes.
Refrigerate until ready to serve.
