Rainy Day Soup

Introduction

An eggdrop-like soup with spinach and noodles. An eggdrop-like soup with spinach and noodles.
Number of Servings: 2

Ingredients

    1 egg
    3 cups fat free chicken broth
    3 cups fresh spinach, de-stemmed and cleaned
    2 oz thin spaghetti or capellini

Directions

Put broth in large pot. Bring to a boil.
Add pasta and let it cook to desired consistency (for capellini, this is about 3 minutes).
In small pot, boil .5 - 1 inch of water. Stuff the spinach in the pot and put the lid on.
Allow spinach to steam around two minutes or until it is bright green.
Add spinach and water to soup.
Lightly beat egg and drizzle into slowly boiling soup. It will cook instantly.
As soon as egg is added, the soup is done.

    I loved this! My fiance wasn't too fond of it, but he admittedly does not like the taste of egg in soup. He said he didn't DISlike it, but he wasn't eager to have it again.

    One change I made with my leftovers was adding just a TEENY bit of soy sauce- fantastic addition! - 8/15/08

    This recipe is something like what my 17 yr old daughter requests when she is having a cold or whatever ailment. Very soothing and comforting. I usually add a bit of fresh garlic and onion -- her request. I think everyone should try this recipe. You're bound to go back to it many times. - 8/3/08

    I just added the spinach to the chicken broth & pasta just when the pasta was almost done. One pot less to clean and it was great. My kind of fast & light meal.

  • Tasty and simple to make -- ya can't beat that. I like that this was formulated for 2 servings... great for singles, who can enjoy one, and put the other half in the 'fridge and enjoy the leftovers the next day. Yet it would be easy enough to double, triple, or quadruple the recipe for more diners. - 12/31/09
