Cinnamon Rolls

Ingredients

    ROLLS:
    1/4 cup warm water (110F / 45C)
    1/4 cup ICBINB Fat Free spread
    1/2 (3.4 ounce) sugar free/fat free instant vanilla pudding mix
    1 cup warm skim milk (110F / 45C)
    1/4 cup liquid egg substitute, room temperature
    1/2 tsp salt
    4 cups bread flour
    1 (.25 ounce) package active dry yeast

    FILLING:
    1/4 cup ICBINB Fat Free spread
    1 cup brown sugar
    4 tsp cinnamon, ground

Directions

1. In a large bowl, dissolve yeast in the warm water. Mix in the stevia, margarine and salt. Cover with plastic wrap, and fix the pudding while the yeast foams.

2. In a large bowl, combine egg substitute, pudding mix and milk.

3. Measure out 4 cups bread flour, and sift.

4. Add the pudding mixture to dissolved yeast/water. Mix well. Add in the flour. Knead the dough in the same bowl until it forms a ball. Spray a separate bowl with cooking spray, and place the dough in it and cover with plastic wrap. Let rise for 1 hour.

5. After dough has risen, turn it out onto a lightly floured surface and roll into a 17x10 inch rectangle. Spread with brown sugar mixture.

6. Roll up dough, beginning with long side. Slice into 16 - 1 inch slices and place in a 9x13 greased pan. Let rise in a warm place until doubled, about 45 minutes. Meanwhile, preheat oven to 350F (175C).

7. Bake in preheated oven for 15 - 20 minutes. When finished, remove rolls from oven and top with cream cheese frosting (1-1/2 T per roll).
