Broccoli Soup (Vegan)

Introduction

Very fresh, clean and simple soup. Very fresh, clean and simple soup.
Number of Servings: 4

Ingredients

    1 cup chopped onions
    1/2 cup chopped carrots
    1 bunch of broccoli
    1 cup chickpeas-drained & rinsed
    3 cloves chopped garlic
    3 Tbsp Extra Virgin Olive Oil
    Salt & Pepper to taste

    I use all fresh vegetables in this recipe.

Directions

yields 4 servings--approx 1 cup--mine makes a little over a cup per serving.

Saute onions in EVOO. Add carrots and garlic once onions are soft. Let saute about 5 more minutes. Add 4 cups water and cut up broccoli. Bring to boil & let simmer about 10 minutes. Add chickpeas, salt & pepper to taste and let simmer another 10 minutes. Check broccoli to make sure it's soft before blending into soup. I use a blender and blend in batches.
