Thais makes a nice quick lunch for one Thais makes a nice quick lunch for oneNumber of Servings: 1
Ingredients
-
* Zucchini, baby, 1 large, chopped into chunks
* Spaghetti/Marinara Sauce (tomato sauce), 0.25 cup
* Red Lentils, 2 tbsp
* Beet greens, fresh, 0.5 cup chopped (any greens will do such as kale or kohlrabi tops)
Directions
Add all together in a pot. Simmer till the lentils are soft. Add a little water so it won't be too thick. More water makes it more soup-like. Less water makes it more like a stew. If tomatoes are ripe, you can eliminate the spaghetti sauce and just chop a nice big tomato in there. If so, you will need to add some seasoning so it won't be bland.
