Banana Pudding

Number of Servings: 10

Ingredients

    1 cup Sugar
    2/3 cup flour
    Dash of Salt
    6 Egg Yolks [save Egg Whites for Meringue]
    1 [12 oz] can evaporated milk
    1/2 cup Fat Free Half & Half
    2 cups 2% milk
    1 Teaspoon Vanilla Extract
    6 Small Bananas
    1 box Nabisco Reduced Fat Nilla Wafers
    Meringue [see recipe on this website]

Directions

Mix flour, sugar, and salt into heavy duty pot. In bowl, whisk together egg yolks with evaporated milk, half & half and 2% milk. Cook over medium heat until smooth and thickened - stirring constantly is important so mixture does not burn. Remove from heat when thickened and add vanilla. Set aside and cool.

Use 13x9x2 pan or round corning dish to assemble. Start with a layer of vanilla wafers, a layer of banana slices and pour half of custard mixture over layers. Repeat the process. I usually end with a third layer of wafers before I spread the meringue on top. Bake at 350 for 12 - 15 minutes. Ther meringue will brown evenly. Cool completely and enjoy!
