Introduction

Pasta with sweet peppers, spinach, garlic and Parmesan cheese. If you can eat a smaller portion, the nutritional info will be even betteróbut I can't resist it! Ingredients

    150g whole wheat pasta
    1 tbsp olive oil
    4 cups fresh spinach
    1 red bell pepper
    1 green bell pepper
    3 cloves garlic
    1 tbsp Parmesan cheese

Directions

Boil pasta.

Meanwhile, dice peppers or cut into long strips. Saute them in the olive oil with garlic. Add spinach and saute until just wilting.

Serve pepper mixture over pasta. Sprinkle with Parmesan cheese. Makes two servings.
