Mini Spinach Quiche

Introduction

This quiche is made in a mini muffin tin and each serving has less than 60 cals! Great to make at the beginning of the week for breakfast and you can even freeze them if you make a large batch. Ingredients

    1 tbsp olive oil
    1 onion, diced
    3 cloves garlic
    1 10 oz package spinach, chopped
    4 eggs
    4 oz part skim shredded mozzarella cheese
    4 oz shredded cheddar cheese
    1/2 tsp salt
    1/2 tsp black pepper
    1/2 tsp cayenne pepper



Directions

Makes 24 mini muffin servings.

Preheat oven to 350.

In a skillet, saute garlic and onion in olive oil until the onion is clear. Add chopped spinach and mix thoroughly over heat for a few seconds.

In a separate bowl, scramble the 4 eggs. Add the salt, black pepper, and cayenne pepper. Mix in the cheese.

Lightly grease the mini muffin tin (I use non stick spray, very light over the whole tin then wipe the excess off the top). Spoon spinach mixture into each muffin tin, about halfway full. Spoon egg/cheese mixture over the top of the spinach mixture. The tins can be full, they will not overflow.

Bake in oven for 20 min, or until egg is completely cooked.
