Ingredients

4 small red potatoes, quartered
Yellow pepper and green pepper, chunked
1/4 Onion, chunked
2 medium Zucchini, chunked 3/4"
10 Baby bella mushrroms
12 sweet peppers
2 T red wine vinegar
1 T olive oil
1/4 tsp Kosher salt
Pepper
1 lemon, cut into wedges.
Directions
Slide veggies on prepared skewers. Brush with vinegar mixed with oil. Sprinkle vrey lightly with salt and pepper. Cook under broiler 7 minutes, flip over, cook 7 minutes more.
Squeeze lemon wedges over cooked skewers just before serving.
