Not traditional. Pretty much the same as the other rice paper recipe I submitted, except these ones include red capsicum and surimi.

Ingredients

    - 5 sheets of Vietnamese rice paper (or spring roll wrappers)
    - about 6 sugar snap peas, sliced lengthways
    - green part of one spring onion, sliced lengthways
    - 1/5 red capsicum, sliced lengthways
    - 200g surimi, sliced lengthways
    - 2 eggs, fried like an omelette
