Coconut Cherry Espresso Energy Bar

Introduction

This is a powerhouse of nutrition with a 3:1 Carbohydrate to Protein ratio. For the protein powder, I use either a high protein shake (Advocare Meal Replacement Shake) or a Soy Protein Powder (Fearn). Ingredients

    1 C Dried Cherries
    1 C Unsweetened Cocunut, dried, flaked
    1/2 C Almond Butter
    1/2 C Natural Almonds, unsalted
    1/2 C Bob's Red MIll Hot Cereal with flaxseed
    1/4 Agave Nectar, light
    6 tbsp Protein Shake
    6 tsp Instant Espresso

Directions

1. Put all ingredients in Food Processor and process until everything is well combined and becomes a "wet sand" consistency
2. Pour mixture on aluminum foil and press into a square that is approximately 9" x 6" x 1/2" and wrap into a tight rectangle
3. Refrigerate overnight and cut into 12 bars that are 3" x 1.5" by 1/2"
