Easy Lemon Caper Tilapia

Introduction

So quick, so easy, so tasty. I make it with preserved lemon but you can just use the lemon juice and it will be delicious! Delicious on top of rice, quinoa or bulgur wheat. Ingredients

    1 tilapia filet (2 oz)
    1 tsp olive oil
    1/2 tsp capers
    1 tsp lemon juice
    1/8 tsp chopped preserved lemon
    pepper to taste
    optional: salt

Directions

Preheat oven to 375 degrees.

Place tilapia in a baking dish and drizzle with the olive oil. Squeeze some lemon juice on top (about 1/2 tsp).

Bake for 10-15 minutes or until it flakes easily with a fork. Be careful not to overcook or it will get dry.

Remove and top with capers, preserved lemon, and the other 1/2 tsp of lemon juice.

Season with pepper. You can add salt if you like, but the capers are quite salty already so most people I have made this for don't need any additional salt.

It's just that easy!
