Greek Cauliflower Potato Salad

Submitted by: AZCHRISANN

Introduction

There is no great calorie savings with the cauliflower only salad, but it is much lighter in the stomach, so I made it half and half. The true savings comes from using the Greek yogurt. Directions

While cooked ingredients are cooling, assemble remaining ingredients in a bowl and mix well. Then add cooled items and garnish.
The trick to loving this recipe is to make it exactly like you would normally make your potato salad. Just decrease the eggs and mayo you would normally use.
I love the Greek yogurt, it has a completely different taste and consistency than regular yogurt. I use it to substitute half of the mayo or sour cream and I can't tell the difference.
