My Breakfast Quisadilla

Introduction

I used a combination of all kinds of Veggies. I even diced up some mushrooms and hot peppers. I used a combination of all kinds of Veggies. I even diced up some mushrooms and hot peppers.
Number of Servings: 7

Ingredients

    3 large fresh eggs
    3/4 C Egg Substitute
    1/4 C Cannadian Bacon
    1 oz 4 cheese Mexican reduced fat cheese
    Combination of any kind of veggies that you like, even mushrooms.
    7 flour tortillas

Directions

Combine all ingredients except Cheese and Tortilla. Cook mixture as you would scrambled eggs. Divide up into 7 servings. Heat tortilla and place 1/7 of mixture on one half of the tortilla. Sprinkle about one tablespoon of cheese on top of eggs. I also sliced a tomatoe very thin and placed on top of cheese to add some moisture. Could even place a tbs of your favorite salsa for variety.
