Green Chili Pork Strata

Introduction

A delicious alternative to enchiladas with great flavor and lots of whole grain goodness! A delicious alternative to enchiladas with great flavor and lots of whole grain goodness!
Number of Servings: 12

Ingredients

    6 3oz boneless pork loin chops with fat removed, pan-fried with garlic, onion powder, salt, and pepper
    12 slices Ezekiel 4:9 Bread
    2 1/2 cups nonfat milk
    2 cups chopped yellow onion
    10 large eggwhites
    12 oz mozzarella cheese
    2 roasted, peeled, and chopped poblano peppers
    salt, pepper, nutmeg

Directions

Shred pork. Spray a casserole dish with nonstick cooking spray. Place 6 slices of bread and cover with half of cheese. Then place all of pork and onions as next layer. Cover with remaining bread and final layer of cheese. In a bowl combine milk, eggwhites, and seasoning to taste (some people do not like nutmeg, etc. I use 1 tsp nutmeg, 1/2 tsp pepper, 1/4 tsp salt). Set in fridge for 8 hours. Remove from fridge and cook in 350 degree oven for 45-55 oven depending on altitude.
