Raisin Bran Flax Muffins (Low-Fat)

Introduction

These muffins are super easy to make and have healthy Omega-3s from the flax. They also make a great snack. These muffins are super easy to make and have healthy Omega-3s from the flax. They also make a great snack.
Number of Servings: 6

Ingredients

    3/8 cup soymilk
    20ml applesauce
    32g ground flaxseed
    8g whole flaxseed
    1/2 cup whole wheat flour
    1/4 cup wheat bran
    1 tsp baking powder
    1/4tsp baking soda
    1 egg white
    60g raisins
    1/2 tsp vanilla extract
    1/4 tsp stevia (or 1/4 cup sugar equivalent)

Directions

Preheat oven to 375F and line 6 muffin tins with paper liners

Put wheat bran in a bowl with soymilk and let soak for at least 5 minutes

Put raisins in a bow with water and microwave on high for 45 seconds. Drain and set side.

Mix flour, stevia, baking powder, baking soda, and ground flaxseed in a bowl. Set aside.

Mix applesauce, egg white, and vanilla extract in a small bowl. Mix into Bran mixture.

Fold flour mixture into the applesauce mixture with the least number of strokes possible. Fold in Raisins.

Divide batter evenly among prepared muffin cups and bake for 14 to 18 minutes or until a toothpick inserted into the center comes out clean

Makes the best 1/2 dozen muffins you'll ever taste.
