Mini Banana Pies

Introduction

An alternative to banana bread.

Makes two mini pies, each serves 2 people.

Ingredients

    CRUST:
    1/2 cup whole grain graham crackers
    2 tablespoons tub margarine

    FILLING:
    2 very ripe bananas, mashed
    1 teaspoon vanilla
    2 eggs
    1 cup powdered sugar

Directions

1. Preheat oven to 350.
2. Prepare crust by melting margarine and combining with graham crackers then place in pre-sprayed mini cake or pie dishes
3. Make filling by mashing bananas, and combining them thoroughly with other filling ingredients.
4. Pour over crust.
5. Bake for 30 Minutes then let cool on stove top for at least an hour. Chill until ready to serve
