Introduction

Number of Servings: 60

Ingredients

    2 cups rice
    1smallish tomato
    1/2 small red pepper
    1 small onion
    2 Tbsp parsley (4 Tbsp fresh)
    2 Tbsp crushed dried mint (4 Tbsp fresh)
    pinch cinnamon
    pinch allspice
    salt and pepper if desired
    60 canned (or young, fresh, blanched) grape leaves
    1/2 cup lemon juice
    1/2 olive oil
    several garlic cloves

Directions

cook rice, add grated onion, finely minced tomato and peppers, and herbs. depending on size of grape leaf, add one to two tablespoons mixture and fold grape leaves around it.
layer in pan, using leaves to separate layers. tuck cloves of garlic in among the leaves. Pour mixed lemon and oil over pan and bake 1 hour.
Makes sixty small dolmas.
